The distillate is divided into three parts:
- Head : the first fraction, rich in volatile components.
- Heart : the most precious part, which contains pure ethanol and the aromas of the botanicals .
- Tail : the last fraction, with less pleasant aromas and water.

With a batch distillation carried out with the utmost care, we capture the purest essence of each botanical. Each drop contains the perfection of our savoir-faire, obtaining a gin with a unique character.

We bottle RESTART using only the heart of the distillate.
